This looks great. I've seen some pizzaiolos use grana padano along with the mozzarella, but this seems to be a point of difference. Good to see plenty of basil, and the spotting on the crust looks excellent. The thing that made me cringe was to see the peel head on the floor, even though he did torch it over the flame.
Tony at least your using a wood fired oven. Here in NYC most guys are not getting there ovens hot enuff so I suspect they are running mostly on gas and throw in a piece of wood here and there. Your margherita looks superb and Im sure must taste superb. Your video has inspired me to build and oven in my yard and maybe ill sell my bagel store and open up a brick oven place,lol. @mylegsasleep1934 you do not need to wear gloves prior to cooking a product. u must wear gloves afterwards for any food that is ready just to be served

As a chef, it's all about the use of your hands. I love breaking off the cheese by hand, Pizza is a labor of love. Simplicity at its best. It also takes a long time come up with the perfect dough. But once you get it, Perfection. It varies from kitchen to kitchen when making your dough
The pizza looked good, but I didn't see any strawberry, chocolate, or vanilla ice cream on it. Maybe you dip the pizza in the ice cream to make it neapolitan?

what's the recipe for that dough?! I can make a pretty good one, but it's never as easy to stretch out as the one in your video... always pulls back on me or sometimes rips, so I can never get a good thin pizza..
You may be trying to stretch the dough cold. Let it warm to room temp. Also, you might consider a higher protein flour, or less mixing time before balling the dough for proofing.
