Julian is trying to avoid feeling responsible, and that's obvious, especially near the end. He's trying to pretend that he's not responsible for the kind of loathsome, destructive attitudes towards fat people that the industry he works for breeds into society, an attitude HE HIMSELF engaged in constantly throughout the interview. He fails to make the connection between his institutionalized size hatred and his own rant about anorexic kids. Anyone who thinks he's right is as delusional as he is.
