I remember a Military Channel episode that mentioned that. The technique was to first ventilate the locomotive boiler. As it lost steam pressure the train would quickly come to a halt. Then they could go to work.

The train and its cargo was the target. The main thing was to get the hell away from it as fast as possible.

@dappledbaybeauty I am so glad Disney shows throughout this film the "Mixed Signals" of communication that was so typical to German and Austrian authority at that time in history. Totally absurd. A horse would kick them.
