No this is not a waterless earth. This is a Gravity distribution though earth surface made by the GOCE satellite. It is an exaggerated representation to show where the gravitational pull is stronger and where it is weaker, since the Earth's mass isn't distributed evenly and inside it its also far from well distributed.
