  • @OneHand80 : It's Indian cottage cheese... you can buy from any Indian store. Alternatively, you can make it at home...very simple and there are lots of videos in you tube. Hope this helps :-)

  • I wanted to ask you about a recipe that I saw, either on Google or on your website, but for some reason did not save it. It was a rice dish that included adding sugar with the onions and peppers. I really wanted to try the dish, but cannot find it again, either here or on your site. Does this recipe ring a bell? With regards to you burning yourself, I did see the "alert" not to eat straight out of the pan, but wasn't sure whether it was just hot from the pan, or hot from the pan and spicy too!

    I followed your recipe but added some red food color powder with a bit of water (like the way we do thechicken 65) because i only could get ahold of green bell peppers.

    My paneer was not as crispy because my batter was too runny (is it because i deep froed the paneer in kadai instead of a pan like you did)?

    Since I am nonveg, can i skip the water in the battter and only make do with the egg, cornflour and white flour? How do i get a more crispy chili paneer ?

  • @sizzlingsuchi2000 : I got Ching's Secret dark soya sauce from the Indian store..try it out...it is flavorful, dark and has no weird small :-)

  • Aji no moto is Monosodium Glutamate (MSG). You can find this in East and West Asian markets. In American grocery stores look in the spice aisle under the product called Accent.

  • honestly i have made this both with and without the ajinomoto. no one could tell the difference. i have no idea where to buy it in australia. just leave it out if you cant find it. let us know how your dish turns out :)

  • am not 100% sure but i think this is equivalent to MSG crystals... apparently it's the magic ingredient that makes all chinese dishes taste awesome, but also has cancer causing claims attached to it :(

  • @submitenter paneer is made from milk whereas tofu is made from soybeans. there is a lot of difference taste-wise also.

  • Hello everyone...i m from canada and we dun have fresh paneer here,,,so we use the paneer which cames in small package...i tried to do fry that paneer as chef but it really became hard...so the second time i didn't fry it and just put it though....it truns out so delicious!!!

  • If the paneer goes dry, fry it before you add it to your dish, then soak the paneer in water, that will sofen the paneer.

  • I thought I could take some liberty in answering your question. Paneer is simply Cottage Cheese. But the kind you get in stores is with curd and won't be suitable here. Either you can buy the Indian Cottage Cheese from any Indian Store or boil some milk (whole is better) and add fresh lime juice to it. This will split the milk. Strain through a cheese-cloth until you are left with only milk solids. Compress and refrigerate. You can mold it into any shape you want. Hope that helps...

  • MSG in small amounts is not harmful. It only affect people who have asthma or other history of respiratory diseases. Check the FDA website for more info.

  • Ajinomoto is a taste enhancer made from monosodium glutamat, widely used in east asia. It is has strong chemical compositions, and strongly suggested by the doctors to be avoided. This enhancer can artificially gives you delicious taste since it influences the the taste perception in your brain and tongue. Better to avoid it, since it can be addictive, and in a long term might provoke cancer. It appears in different names such as Sasa, Masako, Knorr, etc. Please better to be prudent!

Just as you said, even I live in democracy and have the right to give suggestions. I don't care whether YOU agree with them or not. At least, I have the decency not to call him a "strange guy" just because he added garlic many times.

  • I think you will find that many chefs use their hands whilst cooking. To make bread dough without hands is not easy (unless you have a dough hook). Please view videos from Jamie, Nigella, Delia, Rick Stein and Ina who have all used their hands in recipes. One thing I don't like is that the chef doesn't wear a hat- hair in my food is not cool - but then again neither do Nigella and the others. But all in all, you've made a good point explaining that hygiene is of the utmost importance :o)

  • Please tell me what "Maidar" means in english. the flour like powder u put in and mixed b4 frying the paneer.

  • maidar means in English. plain flour

  • Maida is not plain flour - it is processed flour and can be bought in Indian/pakistan grocers if you reside outside India.

    Because it is processed, it is not considered as healthy as wheat or rice flour. Maida's main use in any dish like this is to replace egg as the binding material for breading the cheese cubes. Hope this is helpful.

  • You are most welcome. The main way Maida is different from "all purpose flour" that is available in The USA is that Maida provides rich flakiness and excellent elasticity if used over, say, about 3/4th of the flour mix. Generally, the dough is partially wheat or any other flour and partly Maida, depending on what is trying to be made. For example, the traditional "Parathas" use maida compulsorily. So does "Poli" (Puran Poli) that compulsorily needs to stretch like rubber before being made.
