  • Konig1985 the Alcohol is already warm and the surrounding temp in the wok is so hot that the actual flames coming off when the alcohol burns are actually not as hot as say burning Deisel fule or paper in that fact. that's why alcohole is used to prime the engines of drag cars. it doesn't need as much heat to burn.

  • He uses some extraordinary ingredients but there is just so much unecessary sodium and fats in there. It could've been better if he used more spring onions, ginger and perhaps other fresh spices instead. Sichuan cuisine is like no other and it doesn't need to rely on heavy amounts of sodium and fats to make it good.
