2 differents cars: Turbo is a comfortable daily use car, GT3 is more for racing (even if you can use it on roads) when we talk about "fast" the top speed is not the most important thing...
The GT3 is sharper and stiffer than the GT2; You need to soften suspensions with so much torque but the GT2 is much more precise than the Turbo that is designed to be a comfy allrounder AWD GT car.

A GT3 hasn't got stability control, and for information, on a slow track, a GT3 is as quick as an Exige but on a fast one, the GT3 is quicker, the only problem is that the GT3 is more difficult to understand and to tame, the Exige is very easy, even the first time you drive it.

well the gt3 is miles ahead in terms of handling. porsche pretty much just threw a soft setup 4wd on the turbo where the gt3 has the race derived track tuned 2wd.
on hockenheim short (sport auto) the gt3 did a 1:10.4, compare to 1:11.9 for the turbo. i dont remember the exact time on the autozeitung test track but it was more than a second faster there as well.
