  • I would prefer not hving the tomato sauce n eat it dry with the other superb ingredients.. Coz tomato has a very distinct and strong flavor, would take away the original dry ingredient flavor

  • @farhat2tube you can omit the tomato sauce and just use a broth like chicken or beef

  • In Northeast Brazil we eat tons of cuscuz (as we write here) at breakfast, lunch and dinner. Portuguese colonizers brought this food here. But along centuries we made adaptations in recipe and now we use maize instead of wheat semolina (Maize is a vegtable native from the Americas). It may be strange for moroccans: cuscuz made of maize. LOL. BTW It's delicious.P.S. We have at house a special pot called Cuscuzeiro where semolina is cooked and moistened by the water vapour - bain marie. Pedro, BR

  • @jakevargas Yes couscous is great, just add some cooked beef shank to this and it will make it much more filling as well :)

  • hmmm you said 2 tbsp of butter but that was like half of the butter so I'm a lil confuse in that part

  • @yasminsifyme this is just the basic vegetarian version, it's not for any particular country, you can add chicken or meat to it if you like. My Tunisian friend gave me the recipe and told me that this is the basic version :)

  • you omitted one important spice: Ras al Hanout, also Grandmere used Zucchini and Haricot beans with the veggies. As a condiment I make a sauce based on sweet onions, sauteed, raisins and chopped apricots, use orange juice to thin it out. Divide the sauce and make one half very hot with Harissa.

  • I am sick of rice and Couscous is much better. They cook it every Friday in Morocco. My friend taught me how to make it but I can never get it to be the right texture.

  • It is better to steam the couscous. Thats the best and authentic way of making it.

  • @Vesna89 yes steaming it is amazing but for those who don't have a steamer you can make it this way as well :)

  • @iroc31407 well using broth will add a lot of flavor so if you do have some ready, you should use it to cook the couscous :)

  • Great recipe, Dede! I wonder if you will film a recipe for an authentic couscous, from start to finish, using the _couscousiere_.  In addition, I find Tunisian and Moroccan couscous to be very different (I tilt just a bit to the Tunisian variety). I love the _harissa_ that they add.

  • @cherri7 yep there is but I showed you how to make it without it so if you don't have access to it can still enjoy wonderful couscous.

  • @freethinker3161 you don't have to add water, but if you like your sauce not to thick then you should add water, if you like it really thick then you can omit the water.

  • i saw a few of your recipes last tuesday and so far ive already made couscous, falafel, hummus and babaganoush and im going to try the burgul w noodles tonite. i am not a great cook but they all turned out great! i used to live in vienna and had plenty of lebanese and sirian friends (who couldnt cook but knew great restaurants, lol) and i missed this kind of food soooo much! :) thanks!

  • my husbands from tunisia and the best way we make cous cous is lamb with carrota potatoes and cicpeas and we steam the couscous in a sift and i do the same thing when i cook rice now to  i love you vid its good

  • You talk about everything here except how much couscous is used. We know how many onions how much water and quantity of every freaking thing here except the damn couscous. Am I missing something here ????

  • The pot is called couscousier in French, the original name in Morocco is Qadra/Gadra or Barma, the top by itself is called lkaskas. Just a correction the pot is not called "kuskusi". I know Egyptians call both couscous and the pot "kuskusi" but since couscous is not Egyptian, I would ask may be a Moroccan friend for the right terminology. Whatever the name really, just enjoy.   • honestly not really but if you ask a North African person they will tell you yes. I would say make what is easiest for you to make :)

  • Yes, couscous is like pasta or rice and similar amount of carbs. I would imagine that you can just take my basic hummus recipe and add horseradish, I would imagine a couple tablespoons until you get the taste you desire :)
