You increase power too fast. Do it very slowly. The Me262 had the problem, that when throtteling up to quick, the fuel pressure raises too much and lets explode the fuel pipes in the engines. Thats why they start to burn...

Get the game and you should get the sound mod from the AAA forum, the sound is 1000x better than the sounds of the original game.
