I looked up the nutrition data profile for butter online and it was listen as "strongly inflammatory" whereas extra virgin olive oil (a non refined oil) was "strongly anti-inflammatory". I don't know much about this new science of certain foods being inflammatory, anyone care to shed some light?
@elementz1986 I'm thinking that is because olive oil is a good source of omega 3 fatty acids (which are all anti-inflammatory IF they have not been heated) and butter has a different, more saturated fat content not based on omega 3s or medium chain fatty acids. Amazingly, one of the best remedies for arthritis pain that I've seen is flax seed oil...the high levels of omega 3s fight inflammation and seem to give my arthritic clients far more relief than the glucosamine, msm, etc.
I have never been a margarine fan or trim milk fan and the ones that I see eating or using it are over weight and unhealthy. I love the taste of butter and I am not afraid to use it.

Eating cholesterol has a negligible effect on cholesterol levels- your liver manufactures 90% of total body cholesterol. Don't eat soy. eat a tub of butter, that males a lot of sense. While I agree that soy is bad, replacing it with huge amounts of animal fats is ridiculous! who's paying her???

You can order butter from grass fed cows and have it shipped to you; try googling "buy grass fed butter online." When doing so, I would make sure it's both grass fed and organic. It's definitely worth the extra cost.
@m4n4mk1 Kerrygold is a very good and very cheap butter from grass-fed cows. As an alternative for those who might have sensitivities to cow's milk is to get goat milk butter from specialty health food stores.

Grassfed is one thing, but to get any raw grassfed butter is hard, no regular stores carry raw stuff like that, even local farmers will pasteurize, homogenize, before selling.There is even talk of making raw milk illegal to sell. I fear the day when the powers that be make it illegal to eat natural food and force us to only have industrialized, processed junk.
