  • I found this recipe today and then made it as part of our New Year's lunch. Wow! Awesome mashed potatoes!! I don't have a potato ricer but used the old fashioned potato masher. For the garlic, I passed those through the garlic press after they came out of the oven.

  • you can just use a mixer to prosses the potatoes thats wath i do.

  • Bad idea! If you use a mixer, the potatoes will release too much starch and your puree will be ruined.

  • yeah, many would say so. It gets really sticky, but personally i like it that way. But, that is not how i would serve it.

  • Adding to cold milk to hot potatoes will cause lumps, this is due to the starches in potatoes, starches do not like drastic temperature changes, when they do they clump together, resulting in lumpy potatoes.
