Basically in a nutshell: Folding in this case is when computers from around the world run protein folding simulations in order to research/study the ways proteins in our body behave so that way researchers can find ways to cure genetic diseases such as Cancer or Parkinson's disease.

I think I got the gist of that explanation right.
