I have the HD PS3 version of the game, and I've found WAY more than 16 fruits; 3-4 at each tree, and that's counting a clump of fruits as one. Does it mean 16 locations? That's way different than "fruits", which would make one believe that 4 trees with 4 fruits at each = goal.

You've got to beat all of the Colossi in Time Attack mode. You are missing some. Just go back to the statues and pray. Beat the times and get the items you're missing. I know it will be challenging but we all had to do it, if you want the items. And it's worth it!
