a questions regarding the dashi broth. I only found dashi in powder.... should I just add water to obtain the same dashi broth of the recipe?

Yes, you can use powder and water in the proportion indicated on the package. (same with wasabi)

very very sleek...yet a little too sterile for me. Good recipe though, and I wish I had the idea to do one minute recipe videos. Very cool, would like to see more.
