I'm eating my first attempt at these veg nori rolls right now --- yummy! I made slight modifications - added a light layer of hummus (garlic flavor) to the lettuce leaf and also sprinkled some sunflower seeds on the hummus before adding the rest of the veggies. This is really really good! I've switched to vegan food almost 2 weeks ago now, and I'm loving it. I'll definitely be looking for more of your recipes! Thanks!

I was wondering what people think about the fact that raw veggies and fruits have a number of helminth and other parasitic eggs on them. Nori is actually one of the most highly contaminated sources of parasites. Nori can harbor a particularly nasty parasite called a fluke which can infect your lungs, liver (most often), and brain (very rare). Just a paranoid microbiologist putting that out there. By the way parasites can withstand very low PH so pickling doesn''t help. They are very resistant
@jr5star Well I know quite a bit about the immune system and it's relation to helminths. Helminths tend to be very good at evading the immune response (which is to signal basophils to attack the helminths with non-specific cell damaging chemicals). The problem is that a lot of helminths have evolved so that our immune system won't recognize them as foreign. Basophils are also responsible for your allergies which is why there is a relationship between allergies and parasites.

I find that "rocking my knife" works better. It seems to give me more control. The tip of the knife will always be on the cutting board.
