If a Chef is being all nice to people then he's not doing his job, if things are done right people can be poisoned or made ill. In a place like HK you cannot make meals half-assed which is what some people do, and so they get torn a new one in the hopes they wont do it again. Asking nicely doesnt do the job, shouting at someone makes the point clear.
You dont get to be a top restaurant by serving sub-par meals, you want the best you gotta work hard at it.

Gotta laugh at the UN-reality of reality TV. I've never been to one restaurant where they cooked dry pasta for each individual serving. Any restaurant that serves pasta from a box cooks it all beforehand, then reheats it in hot water before serving. They just did it this way to make for better TV.
