I've had trouble finding the custom option too: found a solution on the trapcode forums though, here you go:

"In Trapcode Particular v2 the "Custom" particle type was renamed to "Sprite". It has exactly the same functionality (but with some added features like a separate random seed). The custom input layer was renamed to "Texture"."
