The cow has a spike driven into its brain(fired with a special gun) and then removed, both in half a second. This does not kill them and is not supposed to do so either, it's the stabbing done afterwards that kills. All the blood is drained from the corpse. Death cramps is not unusual.
The spasms at the end of the video don't seem to be from the cow reacting. It looks to me as though the wire attached to it is used to cause muscle contractions so the last of the blood is drained out.
Though, this is far from the video I saw made by the band 8footsativa where they show the animals are fully alive when they hang them up. I wonder which is the more acurate representation.
They are using electric stimulation to ensure the animal bleeds out well. The animal is dead. CPR may not work at this point.

That's quite humane actually, consider a pack hyenas eating it alive compared to this.
