Sorry! love your video btw. But the sight of the metal hammer banging against metal bowl makes me cringe. This is the reason why I've changed all my cooking utensils to wooden. The notion of metal scraping/banging against metal makes me worry there's fine shavings of metal in my food. Call me paranoid but that's my logic behind it :)

I do the same thing with yogurt, but I do the whole thing. I use the whey in recipes and then use what is left as like a cream cheese.
