Carbohydrates are all made out of saccharides, the same stuff sugar is made out of. It varies how fast your body absorbs it but basically, the simpler the molecules are, the faster it is absorbed. The trick is to eat complex carbs that have fiber, vitamins and minerals as well. Sugar has only the carbohydrate part, so it doesn't really give you anything besides calories and is hard on your blood sugar because how fast it is absorbed. I don't paint sugar as the devil, it's just simply not good.
