@Calfeeny Great question! A good general rule is to speak formally with people you've just met or don't know very well. But a lot of the time even if you've just met, young Japanese will say "You don't need to use keigo! (polite language)" if you're both around the same age. Hope this helps! ^^

Na Zdrowie!
Na - means: "on" ( example "book is on the shelf"), but also "for" ( example :"it is medication for diabities")
Zdrowie - means "health"
Na zdrowie - would mean "for health" like you were wishing someone health. Beer doesn't bring health, but it is just polite.
It is called "drinking a toast". Toasts include blessing, wishes or gratitude.
We also use "na zrowie" when someone sneezes. It is like saying "bless you". And it is a blessing.
