I see them all have strength left (mostly full hitpoints) before the death. These are not fatalities I believe? Are they done by a special move yet or what?

No - just a normal uppercut or a high kick that can knock the opponent flying will do it.

Most of the death traps in mortal kombat deception and armageddon the opponents don't need to be nearly out of energy and can be knocked in regardless of how much energy they've got left.

They're not classed as fatalities as such, but they are a good way of finishing off an opponent.
