    Amchoor powder adds touch of sourness to the dish, you can avoid or use few drops of lemon juice.

  • almost the same the we cook..for variants....skip hing....add rai,onions and lahsoon along with zeera and adrak....add desi tomatoes instead of amchoor powder...hope u like these too....alongwith potatoes_gobi...add green matar/peas(sem)......thanks aunty good luck..all

  • Hing is for disgestion, it should be added to spiced foods as it helps reducing the microflora in the gut after eating which causes wind.

  • I can't get Hing in any grocery nearby, can I omit it from this recipe without changing the taste too much? Or can you suggest something I can substitute?

    You can omit the hing.

  • @MsJwalsh123 Most western groceries sell Hing as Asafetida. 

  • @MsJwalsh123 Hing is more for digestion to prevent wind from the cauliflower and potato. If you do get some do not store it with other spices as it will alter their flavours.

  • @MsJwalsh123 you will be probably more successful finding hing if you asked for the non-indian name: Asafoetida

    If I'm not mistaken, you can use onion and garlic instead of hing (Manjula, please don't slap me :D)

  • @MsJwalsh123 Hing is used in Indian cookery to stop the after affects of some vegetables. In other words it reduces wind caused by the food.

  • none, the indian  version is slightly longer, but the flavor it adds is about the same

  • Thanks Manjula ji! My wife and I had so much fun cooking this recipe together last night and again tonight : ) while your video played on our small net laptop - it was great!

    Hope you don't mind, we altered the recipe slightly: we added 1 small chopped onion, 2 garlic cloves pressed, 2 small tomatoes chopped, and cut dried mango strips instead of mango powder. We cooked for about 40 mins - maybe should have cooked the potato beforehand, also cut the potato and cauliflower into smaller pieces.

  • Thanks Manjula ji, You explained it so nicely and slowly. Any body can cook from this. My wife was not home and I made it for her. Everybody including my 11 year old son and 5 year old daughter like it so much.

    I knew already how to make but I never made it with spices paste, I think that was the key.

  • Hello Manjula! I just made this and it turned out delicious! I used very tiny red potatoes and left the skins on as you said. It is quick and easy, and I love how the vegetables don't overcook and the cauliflower stays a little crunchy.

    It really helps to watch you actually make your dishes!!

    (but my hands are still burning from cleaning out those green chiles!!) :-)

  • just made this, delicious, thanks for the video - it's always interesting to see those little techniques that are never mentioned in the books.

    one comment: mine took about 40 minutes cooking time, not 15! (maybe the fact i was doing double quantities made the difference)

  • no, its not sweet potato. This is not a sweet recipe.

  • It looks like a sweet potato. Normal potato has a beige like outer skin.

  • Even though it looks like a sweet potato, it's not. It's regular potato with the red skin. You can use regular russet potato also for this preparation but not sweet potato

  • traditionally Jains dont eat onion or garlic, so thats probably the reason
