I was at one of the only remaining traditional maple syrup places outside of Montreal (sucrerie de la montagne, in Rigeaud) a little while back and I read an article on the wall that said that Quebec is capable of producing lots more maple syrup than we already do but the problem is that noone wants it.
It`s very little known outside of Canada, and even within Canada not many people outside of Ontario and Quebec eat it. It`s like our delicious secret.

Besides loving Maple syrup, I have drank the liquid maple sap fresh-dripped from the tree. It is milder (not yet concentrated by boiling) but still sweet and delicious. Truly one of nature's most special gifts.
They must have made a pretty penny selling that maple syrup to France. I wonder how much of that money they gave to the Native's who showed them how to do it? Hmmmmmmmm
I think that most of it was for domestic use. It was far much easier and cheaper to get sugar from La Martinique. It takes roughly 40 L of maple sap to make 1 L of syrup. And you have to boil the syrup even more to get taffy and then sugar. The production is also limited to the beginning of spring, when days are warm and nights freezing. In fact, in 1763, France decided to keep La Martinique instead of Canada because of its sugar.
I feel so sorry for the Native people. As a Canadian, I feel so sad over what our ancestors did to these beautiful people and their culture.
