how can you just walk into an elevator and know if its hydraulic or traction?

You can tell by the vertical acceleration - traction elevators accelerate more slowly over longer periods of time, while hydraulic elevators accelerate very quickly for a fraction of a second. Also, the motor noise is usually louder inside hydraulic elevators.
