Their mind is there and they know what's going but their physical body prevents them from communicating their points to a certain degree. Even though she was obviously blind, deaf, and couldn't speak clearly, she was a very smart woman and overcame those obstacles even though it took years of practice, patience, and persistence.

Sort of, it takes as much intelligence as learning any language no doubt, one must keep in mind that other senses become more adept when you lose certain senses. So because her brain doesn't need to focus as much on visual and audio stimuli it can spend more time, and focus more energy in interpreting physical stimuli, and taste and scent.
