If you put too much oil in the pan when you are searing the chicken = explosions!!! of oil when you add the water. The first time I tried this recipe I had no problems, but this time I must have used too much oil b/c it was not pretty. there is oil all over my stove and floor and my husband got a little burn :( he said my method of cooking chicken is crazy!! i'm vegetarian so I've only cooked chicken (for him) a couple times b4 this.
@0exstacy0 BUT I have to say that I LOVE this recipe. i wasn't trying to dis it i just wonder if i did smthg wrong b/c i'm not accustomed to cooking chicken. anyway thanks for inspiring me to make smthg my puerto rican husband actually likes to eat :) i think it's going to become a go-to meal in our house too... sofrito = explosions of yummy in my mouth ^_^
@0exstacy0 You definitely have to make sure to put just a touch of oil in there. Otherwise, you will be frying the chicken and you NEVER add water to a pot of frying oil. The reason it works in my tutorial is because there is such little oil that when I add the water the ratio of water to oil is like 4:1 so it allows the chicken to steam and cook through.

I am Puerto Rican, and I use both Adobo and sofrito a lot. But I personally have never seen any other latin culture use sofrito, and only a few people use Adobo. So, wouldn't sofrito be considered a Puerto Rican speciality? Or have I just not met the right people? Lol.
@Jenners87 Sofrito itself comes in dozens of varieties and it differs from country to country and person to person. But it is used all over latin america and spain. I wouldn't consider it a Puerto Rican specialty...maybe there is a specific sofrito you are used to making or using but the basic idea of sofrito is used everywhere. I think you haven't met the right people because I am Dominican and grew up in Miami and everyone I know uses some kind of sofrito regardless of the country. :o)
