You are right that this is one of the best folds ever but the Doyle vs Chip hand you mentioned was QQ vs KK. The best fold I've heard of was against one of the two royal flushes Doyle has had, the guy folded Aces full... THAT's a great laydown. There's a clip on here somewhere where he tells the story.
