  • Why do you take away the gluten when you shift the flour? Isn't a gluten a protein activated when whisked or handled?

  • @Cyrer gluten is glutenin and gliadin combined. you don't take away the gluten when you sift the flour but you give it less of a chance to form because you dot have to mix the batter as much. the more you work a batter or dough the more gluten you create and the tougher it becomes. also resting the batter or dough gives it a chance to rest and organize the gluten so its not as elastic

  • Is he even Japanese? He has a Mandarin-English accent...

  • Does it matter if someone is Japanese to make Japanese Cooking? I'm Japanese and I don't mind.

  • would have been nice if you could have presented the entire recipe and procedure in one video. typical of "expert village" to stretch it out in many video's. sorry! can't follow you any more.

  • THANK YOU!!! I'm glad I'm not the only one who gets fed up with these minute long vids, when they can easily do 10 minutes or more.

  • you are so right. I have been frustrated with expert village wasting our time on you tube. Each chef amy be good but not when the procedures are dragged out over so many tiny shots.

  • Nice.. Good Looking out buddy. Domo

  • Nice..good looking out buddy. Domo

  • shut up... try to say vegtables in his native language without messing up...

  • i'm sorry, but i don't think it's a huge sin to laugh at his accent. "wej-e-tables"? its harmless to have a chuckle at something like this.

as a person who speaks 3 languages fluently, i do have to admit that i frown upon a person who moves from country X to country Y and refuses to devote time to learning Y's language. i've seen too many instances where people have immigrated to a country, lived there for years, and still can barely be understood. if i can do it, so can they.

  • good for you. i also speak spanish and japanese.

  • I see it just the other way. As someone who has studied other languages I understand that it is quite difficult, and is not as easy for some people as it is for others. Therefore I do not pick on foreigners trying their best to speak English. Vegetable is not exactly the easiest word to pronounce. In fact some people say "Ve-Geh-table" and others say "Vech-table."

  • @sfg078 can you speak all those 3 languages w/out an accent?
