@Cyrer gluten is glutenin and gliadin combined. you don't take away the gluten when you sift the flour but you give it less of a chance to form because you dot have to mix the batter as much. the more you work a batter or dough the more gluten you create and the tougher it becomes. also resting the batter or dough gives it a chance to rest and organize the gluten so its not as elastic

as a person who speaks 3 languages fluently, i do have to admit that i frown upon a person who moves from country X to country Y and refuses to devote time to learning Y's language. i've seen too many instances where people have immigrated to a country, lived there for years, and still can barely be understood. if i can do it, so can they.

Therefore I do not pick on foreigners trying their best to speak English. Vegetable is not exactly the easiest word to pronounce. In fact some people say "Ve-Geh-table" and others say "Vech-table."
