If you throw it at just the right spot, with the correct power it should hit both targets on the left.

That strategy took me hours to consistently perform, and ever after that I was only getting both about 50% of the time.

You have to unlock them in classic mode, set to Very Hard or Intense difficulty. When you do, you'll play them as the bonus stage, thereby unlocking them. You don't need to complete the mode or the target test, you just need to get up to the bonus stages.
