Interesting, was the sausage you took some bites from really one that had been cooked by current? The reason I ask is that I wonder what effect electrolysis might have on the chemical composition of what you are swallowing, hotdogs and sausage products contain a lot of salts.
I wonder if the hotdogs are rendered toxic by this process as a result of electrolysis, have you considered this? I've not seen the topic mentioned in any of the cooking by electricity videos I've watched.
Actually, there used to be small ovens that cooked meat by exactly that method. AC doesn't create electrolysis very well. You'd normally use DC for that. So while some salts might break down through electrolysis, it'd relatively negligible. Hot dogs aren't the greatest conductors anyhow (hence why they cook so readily due to relatively high resistance compared to say...copper).
I didn't know about those ovens. On further investigation it turns out that this method of ohmic cooking is actually used in industry! Freshly slaughtered cows are also "electrically stimulated" to improve the meat texture.
The one thing I would say is that electrode material should probably be carefully considered (for long term use.) I saw one youtube example of ohmic cooking where the guy was actually using cadmium plated screws as his electrodes!

I do have to ask, why are you actually holding the wires with your bare hand? All it takes is a microscopic fault in the insulation to shock you. It would be wise to use a foot or two of plastic pipe as a wand with the wire at the very end of it. I have a 4KV MOT and that is the setup I use.
I'm not holding them in my bare hands. I'm wearing two layers of insulated gloves, with the wires running along the outside of the fingers of the outer gloves. And yes, I know even that has risks (I had some fairly strong tingles while this was being taped), but I hadn't seen someone do this with a 15,000 volt transformer - probably with GOOD reason - so I wanted to see if I could pull it off. Thanks for the concern, tho.

*points* I did the pickle one for a science project years ago! Only our voltage probably was as high and there were coat hanger wires taped to electrical wires from an extension cord plugged into a wall...My friend ate the pickle afterwards, he said it tasted like smoke. Me: *smacks forehead*
the thing that scared everybody, when I was an electrician was to get into a panel of plug and grab the neutral(white) wire and touch the hot(black) wire as long as they had no load on them it was little more than an annoying tickle and wouldnt hurt at all but if freaks people out big time
