To avoid bitter flavours ZenithDave, you need to avoid overcooking onion and particularly garlic. If you fry them until slightly coloured they will be fine. Another common cause of bitter flavours is where you have made a paste or gravy from onion / garlic / ginger and UNDERcooked it. It can take hours of gentle cooking to make them taste sweet.

I am looking at this 'cos I bought a chicken bhuna from iceland for £1.50. I thought it would be dire, but it isn't half bad. So I wanted a recipe. Can someone try the 1 from iceland and let me know if it is a bhuna?
