regarding street stands, it is true there is no health regulation, so, better have a local friend handy to let you know which food stands are safe. Which ones are safe and which ones load you with parasites, is largely by word of mouth, so, get to know people. Other than that, enjoy the food!

No but he understands hard work and Tony tremendous respect for them. My father was Ecuadorean and my mother is Mexican. Luckily, they gave me a life that didn't have in America and I appreciate that. Believe me, Tony learned a lot from those Latins and they learned a lot from him as well..
