I don't know about the other poster's "Media Control" theory, but I do think that the longer, uncut takes happened because the directors and actors had a lot more talent than anybody doing it today. To quote Sean Connery, "Idiots have cornered the market" in the entertainment industry.

Great acting and everything, but it feels boring and long because of all the really long uncut takes. Uncut is weird in our non-medieval age.
