LOL Hilah.. you rule ; D *thumbs up* don't ever change! I love collard greens n spinach.. sometimes I'll throw some lemon juice on there instead of vinegar.. mmm
Bacon fat (in moderation!) ain't so bad! If sourced from organic and local farms, especially. Don't forget the vitamins and minerals that require fat to be absorbed!
love your style! How funny I had collard greens tonight. I didn't make it b/c i was super lazy, but next time totally clicking on this video and having you in my kitchen talken to me..thanks
Salt, oil and vinegar is one of my favorite tastes. I've only tried collard greens a few times, but maybe if they were made this way I'd actually enjoy them a little.
cool you can make a cleaning cast iron video! hehe I was thinking if you had used bacon we could have heard your lovely singing your husbands song again! Interesting I have never fried greens before, looks a lot quicker for sure! What did the bottom part of your shirt say?
@metamorphicmuse For some odd reason I thought they looked more like brussel sprouts than something as leafy as this. Kinda reminds me of "wilted lettuce" and I have had that before as well as dandylion greens.
@da959 : Peas, green beans, broccoli, cauliflower, zucchini, yellow & acorn squash, carrots, corn, asparagus, artichoke and spinach are the veggies of my choice. I can't stand brussel sprouts or ANYTHING that remotely resembles cabbage in appearance or taste. I've never heard of "wilted lettuce" unless you're referring to leftover salad. I think I may have eaten dandelion greens in those pre-packaged salad medleys, not certain though.
@metamorphicmuse No,wilted lettuce is cooked in a pan and uses a type of lettuce called
'leaf lettuce".As I remember it, you started out by frying up a little bacon in a pan and then cooking the lettuce slightly in some of the bacon grease to flavor the lettuce. Then after it was done you topped it with a sweet vinager and oil type dressing. You can also add onion and other things to it. It's been a long time since I've had it,but it was pretty tastey.Maybe Hilah can help us out on this one?.lol
I love Kale...I'm addicted to it. Collard greens look like a new addiction for me!!
Unrelated question...have you ever cooked with Chia seeds? I've seen people make them into a savory pudding and it looks so good...or a sweet pudding. They are full of Omega 3's!! yee-haw!!
what is this pan? its awesome

hilahcooking 11 months ago
not supposed to wash cast-iron pans.they tend to rust. Just wipe with a paper towel.
1964Yojimbo 11 months ago
@1964Yojimbo If you use them daily like I do, there's no worry about rusting.

missfarmerjane 11 months ago
@missfarmerjane Yeah, I don't have a problem with it, but it's not the only way to do it. And there is some oil still to help with absorption.
