JR - don't give up on low/slow charcoaling. I've got a Weber kettle that I do chicken and ribs on that turn out great. I put a water bowl in the middle of the charcoal grate, place a ring of charcoal around the water bowl, and light it up. Because the Webers are made so tight, you can use the bottom vent/ash sweeper to control the air and keep the temps right where you need them. I can get about five hours of 225F this way before I have to reload the charcoal.
To JRChadwick: Here's a tip...Use a disposible aluminium tray so your ribs don't char too much. Put your rib in the tray, the tray in the BBQ an close BBQ ^^.
Should cook on propane, hank hill would be thoroughly disappointed.
I hope thats not a reference that is wasted of course.
Looks pretty good to me as well by the way. Kinda making me wish i could do the same, but im in the UK, and 10 minutes of sun a week in the middle of summer isnt quite enough...
I'm a vegetarian, and I'd like to say shaaame one you! j/k I won't whine. I learned how to cook Ribs which I guess is useful...<.< like if the world is ever ending and all I have to eat is a rack of ribs :p! I'm just glad to see you making videos it seems like it's been a while.
As daft as it sounds you may have to make a bbq tutorial video, there isn't a massive bbq culture in britain, or at least bbq's with no pride in the quality of food, you know, get drunk and eat barely cooked food so you have the runs for the rest of the week lol. I'm seriously tempted in getting a decent grill though, soon as the concervatory is finished. And boy, that looked like some tasty food right there.
There does seem to be an anti-food culture in Britain... We are constatly being told we have no cuisine and don't know how to cook.
Well, I do. It's one of the great joys of life - slowly assembling textures and flavours like some arcane alchemical preparation just to have the magical result enchant your palette.
Today I made chicken and bacon casserole with squash, carrots, leeks and mushrooms, a little wine and herbs and from scratch a mint chocolate cheesecake.
Sometimes by baking them at a lower temp for a longer time will give you great results. Just cover the ribs tray in saran wrap, then cover the saran wrap with foil. Oven on 250 or so for about an hour and a half will also produce great results!
I wish I could grill at a lower temperature. At low, my grill only goes down to about 350* The oven would definitely produce more tender ribs, but it's just so much fun to grill!
there is no way I could get away with cooking half a rack of ribs I tend to eat a whole one by myself

It didn't end well.
Try Reindeer meat Chad, it's lovely.

I love reindeer steaks, done a little rare. My favorite meal when I worked in Sweden was reindeer steaks and cloudberries with cream.

My family are herders so when we're there I have them, fresh they're amazing.
cloudberries are nice with them, what I usually have too.

You might be able to get your grill cooler if you only turn 1 burner on, and then cook the ribs over the burners you didn't turn on.
Personally, I like to to my ribs the Good Eats way. Google 'Good East baby back ribs'.
Vidar33 2 years ago
I have done that before, but with a piece of meat as big as the one I was cooking, it would not have cooked evenly.

Ooooh, cooking meat !! One of my favorite subjects.
Be careful the vegetarians don't come out to scold you :-)

Hmmm. My dad is the family grill master. And he is more charismatic than I am while preforming such a task. Maybe I can get him to make such a video.
JRChadwick 2 years ago
That would be the definition of epic... tell him your audience demands it :)
