@keebordcowboy Thai curries are generally not thick curries like many Indian curries for example. There is only coconut milk added to this one; no water. If you want it thicker, don't poach it with the lid on which will create condensation or only use the thick part of the coconut milk and not the runny part. This is actually an incredibly TASTY dish thick or thin that I have served to hundreds of people who raved about it and it ranks in my top 5 popularity wise for Thai recipes.
@87ramasaurus I have to agree with you there. We had far too much sauce in the pan and it was constantly splattering all over the place. Normally when we cook it we spread it between two pans half full to cover the salmon. Do try the dish though as it is one of the tastiest and easiest to serve company and it can be dressed up quite nicely.
