P67 and Z68 boards have pci-e slots that only run in 8x lane speeds when you have 2 video cards or more. Another thing is that X58 MOBO's can support triple channel memory and as opposed to Sandy bridge's Dual channel memory.
I personally went with an X58 build for my rig and I love it. If money isn't the problem, then go for Sandy Bridge/P67 or Z68. Best bang for the buck if your short on the wallet.
