Stem and deseed the red chillies. Soak them in warm water for 15- 20 minutes. Drain and grind to a smooth paste with water. You can use kashmiri red chillies if you want your dish to be less spicy at the same time bright red in color. You can use bedgi or reshampatti variety if you want the potatoes to be spicy.

Sichuan peppers can be substituted with normal black peppers.

I just tried this recipe. But i used a mixture of salsa sauce and red chilli as a paste for the potatoes instead . It turned out to be very good!!

Corn starch is not same as arrowroot. Corn starch is obtained from corn whereas arrowroot is obtained from a tuber called arrowroot.

@sanjeevkapoorkhazana, as said I tried it yesterday. It came out very well, hubby too liked it :-)
Instead of using red chilli paste, I used red chilli sauce. So colour was a bit brownish, but taste was superb!
