There are nice waterproof cases, and you can mount it on your sailboat. So it's a safe solution. To solve the battery problem: 12v cable to your boat's battery and done.
iPhone (with GPS) is a great backup or even main nav device if you don't have a fancy $1000 chartplotter. Assuming you have a proper nav app for it. And as battery power goes, you can get a cig lighter adapter to feed it. Not going to advertise anything, but there are several usefull marine nav aps ranging from $5 to $50. Not waterproof? Just put it into zip lock bag. And it will even float.
You must be nuts to expect something like this to be reliable in a wet and awkward situation like this. The iPhone ain't waterproof and the battery span ain't good enough. Only for emergencies I would think, the technology on board should be adequate enough. We don't need to get overboard with the iPhone being such a great phone and that!
