even if you cant get it right, you can always learn to avoid, but you can check in this video to see when the timing it and use that in practice mode.

i had that problem, just go in training, dont swing and learn what sounds he makes for each attack, and then learn to dodge, great way to practice to beat him.

I understand your area on the whole punching left first but since mines is right, I kept missing one of Don Flamenco's moves where you need to hit him from the left first.

Heh, I couldn't KO Don when I first faced him (Didn't practice) so I ended up winning by desicion whereas Bald Bull, after some practice I finally TKOed him.

And one more thing, after many hours of practicing, I beat Mr Sandman with a TKO!

He appears more often than any other opponent.

Oh geez! I just beat him on title defense mode. It wasn't easy! He can only be knocked down by a star punch. Normal punches only result in him getting back up, even if you punch his gut during the bull charge. Doing so however does earn you a star.
