hello i just had a question about a video you had posted a while back about canning potatoes for french fries , did you remove the video or am i just over looking it , i can't seem to find it and wanted to watch it again . I just came into 150 lbs of russet potatoes and wanted to can some on them like you did for french fries but couldnt remember what you did exactly in your video.

Ouchie! I learned my lesson the hard way as well, but it was the tip of my pinkie I almost cut off.I love the isert idea! When I did my very first dehydratng try of potatoes, I didn't blanch them, and yep, they turn a really ugly color. I used them for dog treats..lol Hey my dog liked them alot!
@dakotapreacher I wouldn't leave the skins on because I know that when it comes to canning potatoes they say you shouldn't can them with the skins on because potatoes are grown in the ground where bacteria exists. The bacteria can get embedded in the skins and can't always be scrubbed off, especially around the eyes. I'd think the same would be true when it comes to dehydrating them.
@dakotapreacher Personally I think it'd be fine. The skins would first be dehydrated then if they're stored in mylar bags with an oxygen absorbers bacteria couldn't grow.
@Topaz5866 Look through my videos, in some of them I show how I'm using dehydrated and canned foods. It's not much different than using the same foods fresh, just more convenient since all the chopping and slicing is already out of the way.
I have dehydrated both white and red. I prefer to dehydrate the red because they typically hold up better in soups and stews. But when they are not on sale and the white russets are then I dehydrate them. I have dehydrated sweet potatoes in slices, but I am considering grinding them into powder since we eat our sweet potatoes mashed anyway. It will store in less jars as a powder. I have not tried hashbrowns. Thanks for another great video.
@n2viewing Thanks, I've tried grinding dehydrated sweet potatoes into a powder and they didn't rehydrate as well as I had hoped. They weren't smooth, kind of like rice pudding if you know what I mean. I've heard if you dehydrate regular potatoes and grind them for mashed potatoes they don't do well either. I had the same idea about saving space by grinding.

I found bags of frozen diced potatoes on sale and tried dehydrating them. They turned out great and were extremely light in color when finished. I know fresh potatoes would be better but I couldn't pass up the buy on get on free sale!
@anneza5 I'm trying to keep the videos as brief as possible because I know people are short on time. I've never dehydrated refried beans, I'll have to try it, thanks for the tip!
Thanks; I'm hoping to get my root cellar remodeled this spring (I'll post a vid), will be storing lots of taters in there.... but dehydrating some might be a good thing as well.
@1930sgirl I started second guessing myself at one point, feeling like it might be better for my family if I bought some "professional food". I bought a combo pack of freeze dried fruits. It turns out the home dehydrated fruits beats the freeze dried hands down.
Awesome as usual. I'm going to dehydrate some celery today. I dehydrated 14 pounds of carrots last week. I'm waiting for frozen mixed vegetables to go on sale so that I can dehydrate them as well. They're one of our favorites.

@mosiersue100 I put them in a pan of water and simmer for about 5 minutes. Drain then fry until very lightly browned.

Have you ever dehydrated refried beans? I did, and they came out beautifully. Instant refried beans. No real cooking. Just add hot water.
