They didn't recognise her in the threads the godmother put her in, and it makes the audience feel excited for her being right under their noses and shmoozing with the prince whilst they spent the rest of the ball probably bored and disappointed. And of course, helps lead to the main climax of the film when the stepmother realises and locks her up.

It's the one time I wish they kept one element from the German verson: at the end during Cinderella's weeding Cinderella' birds peck out the eyes of the Stepsisters, and the last thing they see before they are blinded forever is the happiness Cinderella will have, Divine Punishment for the pain and suffering they inflicted on her for her entire life

I mean, an assertive Cinderella worked very well in 'Ever After', where she punched a step sister in the face.
