I would recommend blending it over heat in the pan, not just tossing it, the eggs sometimes don't fully cook and it can make you sick.

@sonliberadisognare ha vissuto molti anni a firenze e conosce bene la cucina italiana...lei stessa dice di usare pancetta. non ti meravigliare perchè molti italiani non sanno nemmeno fare una carbonara per bene...ad esempio ci vuole il guanciale e non la pancetta e non va rimesso sul fuoco l'uovo...è una crema e non una frittata. evidentemente gli è venuta cremosa perchè non c'è moltissimo uovo. credo che sia brava perchè cucina come chiunque farebbe a casa.
