Ok, but i was taught that to maximize the flavour of the risotto the first thing to do is toast it gently in the pan with a drop of olive oil until it is ever so slightly golden and you can detect a delicate, nutty fragrance. Then, you add your sauteed onion, celery,what have you whilst slowly adding your stock. I garantee this small step will add that something special to your dish. I learned this when I lived in Assisi.
