All Muslims mixed at one time in history or another through marriage. But really the Chinese Hui people are just Chinese. As the African Arab are just Africa but with the distant possible mixing a little or not.
I personally think Chinese Muslims are among the best to interpret Islam in the best way as it is supposed to be. As you see they are very creative and very authentic. What I noticed is that they have amalgamated Islamic and Chinese Calligraphy in Xi`An mosque, I am amazed, a wonderfull form of art. Congratulations.
Someone above asked if chinese muslims are religious. I think that is a very ignorant question. An outsider might think that chinese culture probably has more influence on people's lives than islam. For example in Turkey, where people care more abuot being westernized and want to be more european than muslim. Same happens everywhere in the world. A good muslim knows to put his religion first and then ethnic culture second.

Don't understand why chinese people need your sympathy as if they were living in a misery. Iron castings are common among chinese public buildings to prevent theft etc.

Sorry, no historical proof to support your claims. Hui population did expand through inter-marriage though. It's only recently that Han started to seek islam. But the proportion is just too neglectable. Besides, Han muslims still think they are Han, not Hui.
You can refer to those field martials of Ming Dynasty e.g Lan Yu, Xu Da, who are now worshiped as saints and ancestors of Hui muslins who descend their family names.
