If anyone is confused, Manjula tests the vada batter in water to test if the batter is properly aereated, so they will come out soft and fluffy. You need to beat/whip it to add air to the batter.

In South India Tamarind chutney is not used for garnishing Dahi Vada. But we garnish with green chillies, coriander leaves & temper the Dahi with mustard seeds & kadi patta.
u didn't put ginger n green chilli to make the paste for vadas....as i have been eating this dahi vada since my childhood...thats why i just want to confirm it.

Shouldn't we add salt before beating the batter? How about water in which the fried wadas are soaked? Should it be room temperature,lukewarm or hot?? Should I add salt to water?

I have a friend from Guyana who makes something similar-they call it "bara"-with yellow split peas and moong dal and/or urad dal. They soak it and blend it with garlic, ginger, cumin, scallion, garam masala(and other spices) and fry it, then serve it with pickled green mango (achar) or sweet and sour chutney. I tried making it from her recipes many times before I finally got it right-Your instruction to not add too much water is the key! It was delicious and yours looks heavenly! Thank You!
My mother makes this as well. Her Recipe is a bit different. Instead of using chili powder, cumin and tamarind she uses ginger, mustard seeds , cut green chilies and garnishes with Chinese parsley. It is awesome to see someone else's take on this dish.

these lentils do not have different english name you can find them in indian grocery store. known moong dal this is kind of yellw and urad dal this is kind of white color.

just in case anyone is intersted in knowing the sumeet grinder is excellent for all indian cooking and grinding masalas and other stuff. you can buy it pretty much in canada and the usa in most indian stores. they have a website too. just google sumeet indian pressure grinder. i have had mine for over 14 years and it is fabulous ..

Dahi vada should be very soft and melt in your mauth, just with experience I have seen whipping in circular motion dal is batter whip. I drop dal in water to make sure dal is whipped enough as soon as you put the drop of dal in water dal should come up.
Manjula you are fantastic we all love watching your mouth watering recipes. while on holiday in singapore i tried something at an indian restaurant. it was like crunchy hollow balls about the size of the things you just cooked. inside they had put , yoghurt chili cucumber coriander and sultanas. do you know how to make this. my mouth is watering thinking about them. Urad daal is black gram (split and washed)
We can use only Urad daal also for this recipe, and will come out soo good too :)

1. Why did you say to whip/mix the dals only in circular motion and not go in left to right motions?
2. I did not understand what you tried to show by dropping a drop of dal in water jug?

Dahi vada should be very soft and melt in your mauth, just with experience I have seen whipping in circular motion dal is batter whip. I drop dal in water to make sure dal is whipped enough as soon as you put the drop of dal in water dal should come up.

What's the reason for soaking them in water first? What if you just soak them in yogurt?

If you soak them just in yogurt vada dont absorve the yogurt so vada will be tasting dry and will not be very soft
