I've made this a couple times and it's a simple yet wonderfully taste soup. I especially like the way he slices the onions. I do that eveytime now when I made any version of oyster stew or chowder. It gives a nice variation to the size of the onion peices and adds some texture. Very nice, thx!
I used to live up in Washington near Vaughn Bay. Out at my old landlords beach the oyster meat was about the size of a fist! Also used to work for a couple out on the Hood Canal in Tahuya and they grilled them in the half shell with Tiger Sauce and they were delicious. Makes me miss Washington.
My husbands family has an oyster farm in Shelton, WA. We usually BBQ the oysters w/ butter, parmesan cheese, garlic and sometimes bacon and green onions, fry or smoke them but I think I'll have to try this! Have you ever put potatoes and bacon in it or made it w/ 1/2 & 1/2 or cream? Just wondering looks delicious!
Fantastic. I'd go with cream or hafnhaf. sounds delicious. See other notes here for other suggestions too. Must try some Washington Oysters sometime. Totally different from the Appalachicola oysters i am sure.
Well I am going to go and cook this now for my Japanese wifes family , we have a whole heap of oysters and beer ,,I am sure they will love it Thanks for the recipe ,
This is just how my mom makes it, except she puts a splash of worcestershire sauce, once the onions have cooked down (adds depth of flavor0. Yours looks equally delicious, and I love how you chopped the onion right over the pot. Who needs a silly cutting board? You've got skills! Thank you for this video - it's going in my favorites!
I went through a dozen recipes before I settled on the one I currently use. The only major difference is that I add celery to the mix, and about a 1/4 cup of parsley, and a teaspoon of garlic powder. I always make it on cold rainy days in the fall.
From a cousin: A really great way to keep J. Lee in your company and for the future generations. I have a great clam chowder recipe that I made an attempt at copying from a great sea food restaurant on Miami's Innercoastal Water Way. If you like it creamy, with potatoes, a splash of sherry and canned clams with juice. I especially liked the lead-in showing the beautiful oysters in shell. Good show!!!!!!!
I can attest to the delicious results of this recipe, from personal experience at the table. Sure glad the recipe's been preserved and is being shared.

That mystery spice is simply black pepper. Dad put pepper and onions in EVERYthing.
