@bettyskitchen Hi betty I love your recipes. One quick tip I can give you for chopped frozen spinach is to wring out the extra moisture, in a kitchen towl so it is as dry as possible.

I'm thinking about making this for Thanksgiving, it looks incredibly delicious and kind of like a non-Indian Sag Paneer! I was wondering if it's really necessary to cook the frozen spinach first- I dislike mushy spinach and figured I would just thaw, drain, bake. Any reasons against this idea?

I think it would be fine for your to thaw the spinach and drain. It should cook easily in the oven. I might set the temperature a little lower in the oven, so that the topping doesn't get too brown while the spinach is cooking.
Buckhead's in Louisville makes a creamed spinach that I love and like it better than any thing on the menu. I think their's has a little garlic in it too. Wonder if this tastes as good as theirs...sure looks good. Thanks for all the great cooking. Pam

I'm not a big spinach eater but I saw a suggestion you made to someone about mixing the cream cheese in with the spinach and then maybe sprinkling the top with the parmesan? Definitely a must try!!
I would add a can of cream of mushroom soup just for some extra flavor. I have two bags of fresh spinach in the fridge right now. I am going to try this recipe out. Thanks Betty and Rick! ;)
This is one recipe I have to try. While I really love raw spinach I hate cooked. With cream cheese and parm pretty sure I won't after this. Might even add a few crushed Ritz crackers w/ butter to the top. Think you may have converted me Betty. :o)
@KissHope Hey Hope, if you really don't like cooked spinach, I would advise you to mix the topping in with the spinach, rather than layer it with spinach on the bottom. I don't want you to dread getting to the bottom of the casserole!
@bettyskitchen Ahhhh what a great idea, will do that and then follow with the parm. My Mother could eat this by the packages, just a little red wine vinegar yuck! I do make spinach and artichoke dip but with so much cheese etc you never know it's in there.
