I'd say my favorite 3 unique tricks are 1. mills mess 2. factory 3. box
All 3 of these tricks I think represent 3 out of maybe 5 categories of trick styles that are possible, and have alot of variations, mills mess can lead you to rubenstein's and other "swirly" tricks, factory leads you to all sort of take-out and column patterns, and opens the doors to a lot of stop-motion looking and very interesting sharp, mechanical lookign tricks.
I think these three give the best foundation of skill
1) Siteswaps as a concept (very far-reaching) with 441 and 423 as the first swaps to learn
2) Shower pattern FROM BOTH SIDES, if you're just starting to learn juggling, overtraining this on your weak side is a great way to get over the usual dominance of one side over the other, and because it's the shower pattern.
3) Backcrosses, because they are the first body throw you should learn, and everybody should learn some kind of body throw.

It's instructional, and yet it lets everyone participate!
My 3 (for BEGINNERS!):
1) 2-and-1. As you say, there are SO many ways to develop this. Some prefer 423, but switch hands on the ball in the middle of 2-and-1 and you've got 423!
2) Shower. A staple. And you can develop this one to get 531 or 7131. Eventually use it to build toward 5.
3) 441. Another staple. And this is also good prelude to box (you gotta get sync!).
1. Columns 2. Mills Mess 3. Shower , I agree with your theory about pausing during performance, but it is not an essential trick, it is a performance trick.
Nice Vid Chris! Here are my 3: 3 in one hand b/c I think it is good for an audience b/c it's a trick most non-jugglers can think of doing and looks rather impressive. It also is a great way to show control. Mills mess b/c it's a trick most non-jugglers can not think of doing and it gives a great glimpse into how far juggling can be taken. And last but not least, the 3 ball cascade. Yea, that's right, 3 ball cascade. I mean, come on, it's the 3 ball cascade! Essential!!!
@Juggler1097 oh dear. . . I can run backcrosses with clubs all day long, but can't get more than 3 or 4 throws with balls. ^_^ perhaps I have neglected 3 ball? . . . I have neglected 3 ball.

I would have to say backcrosses, overheads, and mills mess; they are all pretty easy, look great, and can be combined other moves and higher numbers.

+423 (easy to learn, lots of variations)
+synchronous columns (a good introduction trick to the sync patterns)
+under the leg throws (a good introduction trick to the "whole body awarness" mentality)

i would say:
423 (because it is very easy to leran, and it has tons of veriations)
calumns (same reasons as you just said :P)
and 360°s (because 360°s are, in my opinion, a basic concept of juggling)
